How to Make Fried Spring Rolls
- Ingredients:
350g pork shoulder
150g Sweet white turnips
2 new laid eggs
30 Rice paper sheets
20g Dried black mushrooms
150g Cellophane noodles
150g Soybean sprouts
150g Onions
50g Chives, Flour, lettuce leaves and fresh herbs
- Components of the sauce:
Garlic and chopped chilli, nuoc mam (fish sauce), white rice vinegar, a little sugar, ground pepper, green papaya and carrot(150g).
- Preparation:
- Grind the pork meat. Chop the sweet turnips, onions and Soybean sprouts. Chop Chives.
- Soak the Cellophane noodles into tepid water for 10 minutes. Rinse, drain and cut with scissors into small pieces(1.5 to 2,5cm).
- Soak the mushrooms into tepid water for 15minutes and wash them thoroughly, remove the stems and chop finely.
- Mix all the minced ingredients with the eggs and little pepper to make stuffing.
- Mix the flour with little water to make a paste.
- Place one tablespoon of stuffing at the base of each rice paper sheet, roll it. Fold the sides toward the centre and roll all the way to enclose. Paste its edges with a little sticky flour.
- Fly the rolls in hot oil until they turn a golden brown color. Please keep your fire small.
- Finishing and serving:
- Peel and slice the papaya and carrot, pickle with a little salt and sugar. Leave for 15 minutes. Wash again. Squeeze slightly.
- Mix the Nuoc Mam (fish sauce) with a little water, vinegar and sugar. Add chopped garlic, chilli and ground pepper. Finally add the papaya and carrot.
- Serve hot with the dipping sauce and salad.

Hanoi highlights Vietnam tours
The capital of Hanoi occupies a bit more than 900km2 and in this urban centre there are 100 lakes dotting the city. There are natural and man-made lakes, each with its own unique history. They are more than just the soul of the City.When seen from high above, Hoan Kiem Lake appears in the city’s center like a striking blue gem. The long-standing Tortoise Tower in the lake’s center reflects off the lake’s transparent blue water. Along the shore of the lake the willow tree branches sway in the autumn breezes reminiscent of young girls combing their long hair. Nearby, Loc Vung trees flaunt their branches laden with red flowers that droop down to just above the water’s surface.
Hoan Kiem Lake is surrounded by historical sites, including the magnificent statue of King Le Loi and the ancient Ngoc Son Temple with a preserved corpse of an old tortoise. The tortoise relates to the famous legend about the King who fought invaders with the assistance of a tortoise saint who provided him with a magical sword, and his return of the sword to the saint when he returned in triumph: hence the name Restored Sword Lake (Hoan Kiem Lake). Then there is the red-painted The Huc Bridge, meaning “sun beams,” and the Pen Tower, which is in the shape of a pen pointing toward the sky (Ta Thien Thanh). The artefacts surrounding the lake not only relate to past events but also provide a platform for modern life. Every morning the lake awakens to arriving people and their activities that have gone on for years. Amid the fresh morning air, local residents begin a new day, each in their own way. Some do morning exercises by the lake, others having a hot cup of delicious coffee or lotus-scented tea in a shop nearby. It is all part of the lake’s cycle.
Unlike Hoan Kiem Lake, Thien Quang Lake, originally named Halais Lake, is particularly tranquil. At night it is smothered with the fragrance of the milk flower, a very distinctive symbol for lovers. In some quiet lane, now and then there comes the scent of the ylang ylang flower, and sounds from a piano played by a talent artist, which rise high in the air then fall upon the lake’s surface.
Leaving peaceful Thien Quang Lake, we go to the West Lake, best visited on a breezy afternoon in order to enjoy its wide expanse of wave after wave lapping the shore. It is said that the lake is most beautiful in autumn when the lake has curtains of dew and a mist rises from the surface late in the afternoon. Walking along the narrow lanes adjacent to the lake, visitors will see colourful flowers in Nhat Tan, Quang Ba and Nghi Tam villages, famous for their flower cultivation. Lovers regularly sit by the lake at dusk, enjoying the lake’s late afternoon beauty. From a distance come the echoes of the bell ringing at Tran Quoc Pagoda and there is the aroma of joss-stick incense coming from the Tay Ho Temple. Villas are built around the area and elegant boats for tourists cruise the lake adding a special ambiance to the lake and its surrounding area.
On one side of the Thanh Nien (Youth) Boulevard stands Truc Bach Lake, which in one legend is the place where the Fairies come from Heaven to wash their clothes. Beside the lake is the ancient Chau Long Pagoda, where the lovely princess daughter of King Tran Nhan Ton found peace of mind bestowed upon her by the Buddha.
The Thu Le Lake is located adjacent to Cau Giay, one of the five gates leading to Hanoi’s downtown. A curving stone bridge crosses the lake to reach a park with shade trees and different rare beasts and animals. Nearby, the 5-star Daewoo Hotel invites guests with its elegant exterior and comfortable interior. It is the destination for nearly all foreign high-ranking government officials when they come to visit Hanoi.
In the large Lenin Park is the Bay Mau Lake. With its many shade trees, it is an ideal place for sport and entertainment events. Further south, Linh Dam Lake surrounds a newly-built spacious residential quarter with nice villas and modern apartments.
These are not all of Hanoi’s lakes. This is just a quick glimpse at some of the city’s watery spaces. The reality is that it’s impossible to describe the entire beauty of them all.

Known as Vietnam's first national university, Temple of Literature is a famous destination for your Vietnam tour। It was built in 1070 AD under Ly Thanh Tong( Ly dynasty from 1010 - 1225)। The first aims of this temple were to worship Confucius and served as the education centre for the sons of the royal families only.However, a big change was made in 1076 AD under the King Ly Nhan Tong. He opened this education centre to the public for all smart students of the whole country and became the first university in Vietnam.
After passing the entrance examination into this university( called Thi Huong), the students might study here from three years upto seven years, depending on their ablility. Every year, they had to take 3 major exams and 3 minor exams every month. When having enough conditions, they took the second exam( called Thi Hoi). This important exam decised who would become the king's officals.
The 3th exam was born after one of the Kings realising the cheating in these exams। It was called royal exam( Thi Dinh). The King himself questioned the students to make sure they were smart. This university ended in 1915 when the French stopped Vietnamese education systemn. They set up the new one for the purport of controling Indochina(including Vietnam, Laos and Cambodia). This is a very large realm and nobody could say in one article. However, today I talk about the “ Water” function in Vietnamese culture. You may be surprised at my article. Now, we should see Vietnamese culture since the beginning. It dated back to over 3000 years ago when Vietnamese ancestors lived inside many limestone caves in the Northeast and Northwest of Vietnam. These areas are their first home. Time by time, their groups became so big and there were not enough space and food for them. This made them find new areas for living. In the end, they decided to move down the mountains to a delta. This place is the Red River delta at the moment. Here, they had better conditions for their life. There are many rivers, lakes, ponds( at the moment, on a research, one square kilometer of land there is about 1.7 to 2 kilometer of river). Therefore, they could find a lot of fish for food. This is also their first job – fishing. Besides, this area is very flat with full of water. It is good for planning different crops. Then, the second job began. That is wet rice cultivation. It was also the time Vietnamese culture being formed and it is being added upto now through about 5 typhoons per year. They have to get used to living with water. During this time, we call the Red River civilization or wet rice civilization.
Since then, Vietnamese people have learnt to live with water and succeeded in conquering it, using it and taking full advantages of it for their life. Water affects their daily life activities from traffic to making a living like moving by small boats in Mekong river or many floating villages from north to south and fishing with 3265km of coastline. Whatever is made by them, water is first thought. However, the most famous to the world is that Vietnamese people took the advantage of water to defend their country. Any big fighting between the Vietnamese and invaders happened in water. For example, the Vietnamese managed their fighting with Nam Han(Chinese) in Bach Dang river in 938 and they won their independence and freedom after 1000 year domination, the 2nd one is their fighting with Tong(Chinese) also in Bach Dang river and the most famous fighting was in 1288 between the Vietnamese and Mongolian army(under the king Kublai Khan) in Bach Dang river.
Now, joining Vietnam vacations, you have chance to experience our culture through many activities like Halong bay and see floating life in many floating villages, Water puppet show. You will be surprised. Halong bay Vietnam
Ha Long Bay (literally: "Descending Dragon Bay"; ) is a UNESCO World Heritage Site, and a popular travel destination, located in Quảng Ninh province, Vietnam. Administratively, the bay belongs to Ha Long City, Cẩm Phả town, and part of Van Don district. The bay features thousands of limestone karsts and isles in various sizes and shapes.
Ha Long Bay is a center of a larger zone which includes Bái Tử Long bay to the northeast, and Cát Bà islands to the southwest. These larger zones share similar geological, geographical, geomorphological, climate, and cultural characters.
Ha Long Bay has an area of around 1,553km2, including 1,960 islets, most of which are limestone. The core of the bay has an area of 334km2 with a high density of 775 islets. The people kept their land safe and formed what later became the country of Vietnam. After that, dragons were interested in peaceful sightseeing of the earth, and then decided to live here. The place where the mother dragon descended was named Hạ Long, the place where the dragon's children attended upon their mother was called Bái Tử Long island (Bái: attend upon, Tử: children, Long: dragon), and the place where the dragon's children wriggled their tails violently was called Bạch Long Vỹ island (Bạch: white- colour of the foam made when Dragon's children wriggled, Long: dragon, Vỹ: tail).
Location
Ha Long Bay is located in northeastern Vietnam, from E106°56' to E107°37' and from N20°43' to N21°09'. The bay stretches from Yên Hưng district, past Hạ Long city, Cẩm Phả town to Vân Đồn district, bordered on the south and southeast by the Gulf of Tonkin, on the north by China, and on the west and southwest by Cát Bà island. The bay has a 120km long coastline and is approximately 1,553km² in size with about 2000 islets. The area designated by UNESCO as the World Natural Heritage Site incorporates 434km² with 775 islets, of which the core zone is delimited by 69 points: Đầu Gỗ island on the west, Ba Hầm lake on the south and Cống Tây island on the east. The protected area is from the Cái Dăm petrol store to Quang Hanh commune, Cẩm Phả town and the surrounding zone.
Climate
The climate of the bay is tropical, wet, sea islands, with two seasons: hot and moist summer, and, dry and cold winter. The average temperature is from 15°C- 25°C, and annual rainfall is between 2000mm and 2200mm. Ha Long Bay has the typical diurnal tide system (tide amplitude ranges from 3.5-4m). The salinity is from 31 to 34.5MT in the dry season and lower in the rainy season.

Hanoi – Capital of Vietnam
Anyone who has ever visited Hanoi will probably tell you that it may be the most beautiful city in all of Asia. People have settled here along the Red River for a thousand years. Nestled along wooded boulevards among the city’s two dozen lakes you will find architectural souvenirs left by all who conquered this great valley, from the Chinese who first came in the last millennium to the French, booted out in our own century.
The trip into the city from Noi Bai Airport takes about an hour and offers some poignant glimpses of modern Vietnamese life: farmers tending their fields, great rivers, modern highways that abruptly become bumpy roads. The drive is especially breathtaking at dusk when the roads fill with bicycles, and everything takes on the same deep colors as the modern paintings you see in Hanoi’s galleries. Somehow the setting sun seems enormous here as it dips into the cornfields on the horizon.
On the edge of the city the road dissolves into a maze of winding, narrow, wooded lanes. You are surrounded by roadside artisans, shops and taverns, then by graceful villas and commuters on bicycles, cyclos and motorbikes. Modern buildings appear from nowhere, looking so out of place that you have to wonder if they were dropped from the sky and just left where they came to rest. While you tell yourself that nothing as preposterous as Hanoi can be so beautiful, you cannot help but be dazzled.
Getting Around
Meter taxis and hired cars are easy to find in Hanoi. If you plan an extended visit you might consider renting a bicycle or motorbike.
The north end of Hoan Kiem Lake is Hanoi’s “ground zero.” Practically all the city’s economical hotels, tourist shops, and cafés catering to visitors are located here. Not only is it the oldest part of the city, it is the busiest and most interesting. Every street is winding, intimate, and shady. At night the lights of storefronts keep the streets lit and animated.
Depending on which guide book you read, this district of Hanoi is variously called the “Old Quarter,” the “Ancient Quarter,” and “36 streets.” It is wedged between the northern shore of Hoan Kiem Lake, the walls of the ancient Citadel, and the levies that protect the city from the Red River. The 36 little streets in the quarter are each named for a commodity once sold by all the businesses on that street. Streets here are named for the medicine, jewelry, fans, copper, horse hair, chicken, and even coffins once sold on them. This explains why the names of some of the longer streets inexplicably change after one or two blocks. As you explore, you will still happen upon entire blocks of tinsmiths, tailors, paper goods merchants, and lacquerware makers.
In the Ancient Quarter the most appealing mode of transportation for those who do not care to enjoy the “36 Streets” on foot is the cyclo. Often they are driven by men wearing pea-green pith helmets that make them look like soldiers. Settle on the fare in advance (a dollar or less one way). The angular gray granite edifice stands stern and alone against the skyline. The street and square are usually so abandoned that the whole scene is enormously stately, like a miniature version of Tiananmen Square.
